Do you take the time to reflect on what is happening in your life?

  • Yes, I do quite often actually. Especially when I am spending time alone in the house/ my bedroom. Whenever I start to reflect, typically I either become emotional, frustrated, grateful, or feel motivational; normally writing out goals, task that need done (short & long term goals). It comes down to me as what happens in my life that I can control and I am learning that if I don't like something or something makes me uncomfortable, I have to either speak up, or walk away from it, because enduring it sometimes makes a monster out of us. Not saying, I am good at speaking up or walking away, but I have to force myself when it comes time to handle certain situations that may arise.

Are there parts of your life that you find distracting?

  • For awhile, having had gone through a break up with my ex, and losing out on a friendship was distracting me from progressing in terms of my goals and focusing on priorities. Now, between potentially losing out on another friendship and having dealt with work drama over and over again at this job (not the gym) this doesn't necessarily distract me unless I am in the environment, but it does annoy me quite a bit. Outside of those things, I don't really have many parts of my life that serve as distractions currently.
Do you find any part(s) of your life distracting, now or in the past?

Do you ever break the rules?

  • I am not the type of person who will go out of my way to break rules, and I always usually try my best to follow them due to being overly cautious. Although, yes, I have broken rules, and suffered consequences for doing so & sometimes I have been able to get away with action without having someone find out -- but it left guilt on my heart & that can be worse off than the consequences. I prefer to not have to break the rules,however I do believe "some rules are meant to be broken" -- especially if the rule(s) don't align with your values/beliefs, or change your character negatively. Sometimes we have to go against our belief system and sway from our values but many times those set the standards for what we believe in and how we go about doing things in our lives. For example, our moral belief might be to not kill someone but when defending ourselves, it could mean life or death & sometimes killing the other person is the only option if we want to survive.

What quote inspires you?

I have a few that I have read that sparked some inspiration in me, I am the type of person who enjoys reading quotes & I also enjoy creating my own -- because people love things that holding meaning to them. I know this question is probably asking for only one quote, but I decided to be a rebel and share at least two that I like:

"You may shoot me with your words, you may cut me with your eyes, you may kill me with your hatefulness, but still, like air, I'll rise" - Maya Aneglou

"You have to be fearless to have success" - Serena Williams

Chinese beef stir-fry (recipe)

Beef Stir-fry


Now one good thing about this particular recipe is, you can sub the beef for something else that fits your taste buds, I realize not everyone likes meat or beef in particular, so use vegetables only or add some tofu, perhaps you like chicken -- then use chicken instead and if you are feeling really fancy, you can have seafood instead of meat or utilize both at the same time (shrimp and beef, chicken and beef, lobster and shrimp, etc) so make this your own creation if you will. I chose this beef recipe because I have made beef stir-fry in the past (and I have also made other types as well) and it tasted wonderful; my ingredients may have differed from hers but still came out fantastic! I am a firm believer in experimenting in the kitchen, so go for it!

Ingredients: (sauce)
  • 3 tsp cornstarch/ corn flour
  • 2 Tbsp & 1/3 cup of water (separated)
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp of Chinese cooking wine or dry Sherry
  • 1 tsp of white sugar
  • 1/2 Tsp of sesame oil (optional)
  • dash of black pepper
Ingredients: (stir fry)
  • 2 Tbsp peanut oil
  • 1 garlic clove (crushed)
  • 7 oz / 200 grams of beef (thinly sliced)
  • 1/2 small onion (yellow, white or brown)
  • 1/2 red bell pepper (sliced)
  • 1 small carrot (sliced thinly on the diagonal, halved lengthwise)
  • 3 baby pak choy/ bak choy (quartered lengthwise)
  • 3 stems scallion / shallots (cut into 3cm pieces)
Ingredients: (To Serve)
  • Steamed white rice
  • sesame seeds (optional)
  • fresh cilantro (optional)
Instructions:
  1. Combine the cornstarch and 2 Tbsp of water in bowl, mix together
  2. Mix in the remaining sauce ingredients, except the 1/3 cup of water
  3. place the beef and 2 Tbsp of sauce in a bowl, mix gently and set aside for 15 minutes
  4. add 1/3 cup of water into the remaining sauce , set aside
  5. Heat oil in wok over HIGH heat, add garlic and cook for 15 seconds
  6. Add onion and cook for 1 minute
  7. add beef and cook until it changes color from red to light brown (but not cooked through)
  8. Add bell pepper and carrots and stir fry for 30 seconds
  9. add pak choy & scallions/shallots and cook for a further minute until sauce is thicken
  10. remove from HEAT immediately
  11. serve with rice
She makes note that one should NOT use light or dark soy sauce but instead ALL PURPOSE soy sauce. If you cannot purchase Chinese cooking wine, chicken broth can be used in place of, use good source of beef and cut against the grain.

  • I do have spiritual beliefs, but I lack using them to guide me unless I run into trouble or something bad happens.
